Named after a Caribbean island known for fishing, Saba continues the theme with an industrial-chic fish camp atmosphere marked by exposed brick. A 500-gallon aquarium completes the mood of the restaurant, which blends the trends from the Pacific, Caribbean and Gulf Coasts into one melting pot that stews with excitement. Complimentary Indonesian krupuk, chips made of dried-shrimp batter, starts off the excellent adventure. Leading the expedition are the seared diver scallops, which top a butternut squash purée. Also popular is the miso trout, sauced with grapefruit vinaigrette and placed on top of arugula and avocado. Even the Gulf coast staples like crab cakes get a fusion treatment of Thai lemon grass chili sauce, which really creates a splash. At the end of your meal, reel in the fluffy white-chocolate bread pudding, topped with crushed macadamia nuts.
